Pistou soup
Essential
Creamy white beans and meltingly soft vegetables in a broth fragrant throughout with basil, garlic and olive oil. Lemon and oregano add a final note of freshness.

Provençal Soup
Seasonal
Red peppers, courgettes and tomatoes give this soup the fruitiness of a summer stew. Basil, thyme, rosemary and a squeeze of lemon keep it fresh.

Sweet potato and red bean minestrone
Seasonal
Sweet potatoes, red kidney beans, carrots and beetroot in a broth with sheep's milk cream, gently scented with cumin, fenugreek and turmeric. A colourful soup, generous with chunky pieces, that truly makes a dinner in itself.

Vegetable Soup - broccoli, carrots, leeks, squash and oregano
Essential
An armful of broccoli, carrots, leeks and butternut squash in a smooth, velvety soup, fragrant with oregano, bay and parsley. A signature recipe of the House for twenty-six years.
Soup, as evening falls
In the Gers where I grew up, soup came back every evening, hot or chilled depending on the season. This ritual has never left me. The first person I convinced to adopt it was Jeff. It then went with us through life, even on our travels with our children. They grew up with it and now keep it alive in turn, in their own lives and, for some, with their own children.
Together, we created The Ritual so that this moment can become yours and, when evening comes, soup can find its place at your table too.
