Recipe idea: aubergine and pepper tagine / couscous with raisins and fresh herbs
Recipe for 1 to 2 people
Ingredients
- 1 jar of aubergine and pepper tagine
- 1 glass of wholemeal couscous
- 1 tbsp olive oil
- 1 clove fresh garlic, finely sliced
- 1 bunch of fresh herbs: parsley, coriander, mint
- 1 handful of raisins
- Salt, pepper
- Meat-free side: smoked tofu steak
- Side with meat: lamb merguez or beef sausages
Method
- Prepare 1 glass of wholemeal couscous.
- Add 1 tablespoon of olive oil, 1 clove of fresh garlic, finely sliced, 1 pinch of salt and 2 tablespoons of each of the following herbs, chopped: parsley, coriander and mint.
- Mix everything into the couscous, then add a handful of raisins: it is important that every grain of couscous is well coated with the mixture.
- Meanwhile, bring some water to the boil and add a pinch of salt and a small tablespoon of mustard.
- Cover the couscous with the boiling water (the water should come 2 millimetres above the couscous).
- Cover and leave to swell for 3 to 4 minutes.
- Gently reheat our Aubergine and pepper tagine in a saucepan for a few minutes over a low heat.
- When the couscous is ready, stir it well and place our reheated Aubergine and pepper tagine right in the centre.
- Serve the side dish, with or without meat according to taste, in a small dish alongside (we recommend: smoked tofu steak or lamb merguez / beef sausages).
- Sprinkle the smoked tofu or the sausages with a little chopped fresh parsley.
Enjoy your meal!
