Recipe idea: aubergine and pepper tagine / couscous with raisins and fresh herbs

Recipe for 1 to 2 people

Ingredients

  • 1 jar of aubergine and pepper tagine
  • 1 glass of wholemeal couscous
  • 1 tbsp olive oil
  • 1 clove fresh garlic, finely sliced
  • 1 bunch of fresh herbs: parsley, coriander, mint
  • 1 handful of raisins
  • Salt, pepper
  • Meat-free side: smoked tofu steak
  • Side with meat: lamb merguez or beef sausages

Method

  1. Prepare 1 glass of wholemeal couscous.
  2. Add 1 tablespoon of olive oil, 1 clove of fresh garlic, finely sliced, 1 pinch of salt and 2 tablespoons of each of the following herbs, chopped: parsley, coriander and mint.
  3. Mix everything into the couscous, then add a handful of raisins: it is important that every grain of couscous is well coated with the mixture.
  4. Meanwhile, bring some water to the boil and add a pinch of salt and a small tablespoon of mustard.
  5. Cover the couscous with the boiling water (the water should come 2 millimetres above the couscous).
  6. Cover and leave to swell for 3 to 4 minutes.
  7. Gently reheat our Aubergine and pepper tagine in a saucepan for a few minutes over a low heat.
  8. When the couscous is ready, stir it well and place our reheated Aubergine and pepper tagine right in the centre.
  9. Serve the side dish, with or without meat according to taste, in a small dish alongside (we recommend: smoked tofu steak or lamb merguez / beef sausages).
  10. Sprinkle the smoked tofu or the sausages with a little chopped fresh parsley.

Enjoy your meal!
