A Christmas Soup Starter, the French Way

Squash & Mushroom Soup with Crème Fraîche, Black Truffle & Toasted Hazelnuts
There is a moment I especially love at a Christmas dinner: when everyone has just taken their seat and the first course arrives.
It doesn’t need to be large. Quite the opposite.
A small serving of something warm, a beautiful shallow bowl, a few carefully chosen ingredients, and one graceful gesture at the table can be enough to set the tone for the entire evening.
Our Squash & Mushroom Soup feels naturally at home in that role.
Red kuri squash gives it its golden colour and gentle sweetness. Mushrooms bring depth, while tarragon and pepper add lift and definition.
For a festive table, we simply extend what is already there: a spoonful of crème fraîche, a few toasted hazelnuts, and delicate shavings of black truffle.
The truffle echoes the mushrooms. The crème fraîche slowly melts into the soup. The hazelnuts provide the one crisp contrast the dish needs.
Nothing more.
A Small Portion Changes the Role of the Soup
One 500 ml jar makes four small first-course servings, about 125 ml each.
In a larger bowl, the Squash & Mushroom Soup belongs naturally to an autumn dinner. Served in a smaller quantity in a wider dish, it takes on an entirely different presence.
Choose a shallow soup bowl or low bowl, preferably in a light colour, so the golden soup remains visible and the garnishes have room to breathe.
In the centre: the crème fraîche, a few pieces of hazelnut, and the truffle.
Then the soup arrives.
Squash & Mushroom Soup with Black Truffle, Crème Fraîche & Toasted Hazelnuts
Serves 4 as a first course
- 1 × 500 ml jar Karine & Jeff Squash & Mushroom Soup
- 4 small spoonfuls of crème fraîche
- 25 g hazelnuts
- 10 to 15 g fresh black truffle
- Freshly ground black pepper, if desired
Directions
Roughly chop the hazelnuts and toast them in a dry frying pan for a few minutes, stirring frequently, until lightly golden and fragrant. Set aside.
Gently warm the Squash & Mushroom Soup in a small saucepan. Do not let it boil.
Lightly warm four shallow soup bowls.
Place a small spoonful of crème fraîche in the centre of each bowl and scatter over a few pieces of still-warm toasted hazelnut.
Slice the truffle as thinly as possible.
Pour about 125 ml of hot soup around the garnish, leaving some of the crème fraîche and hazelnuts visible.
Finish with the truffle just before serving. The heat of the soup is enough to release its aroma.
Serve immediately.
Pour the Soup at the Table
For a Christmas dinner, we also love serving this first course another way.
Prepare the bowls with the crème fraîche, hazelnuts, and truffle, then bring the Squash & Mushroom Soup to the table very hot in a small jug.
Pour the soup slowly around the garnish in front of your guests.
The golden soup flows around the centre of the bowl. The crème fraîche remains white for a few seconds before beginning to swirl into it. The warmth reaches the truffle and releases its fragrance.
It is a simple gesture, but for a few moments, it gives the first course all the attention it deserves.
Why This Pairing Works
Because mushrooms are already part of the Squash & Mushroom Soup, black truffle does not take the recipe in a new direction. It simply extends that earthy depth with greater intensity.
The crème fraîche adds richness and a gentle tang.
The toasted hazelnuts, added at the last moment, keep their crunch.
Each element has a precise role, and the soup remains at the centre of the dish.
Almost Everything Can Be Ready Before Dinner
The hazelnuts can be toasted ahead of time. The crème fraîche is ready, the bowls are set out, and the soup only needs to be gently warmed.
Only the truffle needs to be sliced at the last moment.
By the time everyone sits down, it takes just a few minutes to finish all four bowls.
Soup, at Home in So Many Moments
At Karine & Jeff, soup has always had this freedom.
On a summer evening, it might be served chilled when all you want is something cool and refreshing. On another night, it becomes the first course of a festive dinner, served over a beautiful tablecloth, a few sprigs of fresh herbs on the table, in plates that catch the light.
That may be, for us, part of the magic of soup.
It belongs to remarkably different moments without ever losing its place at the table.
Some evenings, it is simple and part of everyday life. On others, it becomes elegant, finished with a few shavings of truffle and served at the beginning of a dinner prepared with special care.
But it remains the same familiar presence, one we return to throughout the seasons, on ordinary evenings as well as those we want to make a little more memorable.
For this festive table, the Squash & Mushroom Soup is already cooked and waiting in its jar.
All that remains is to warm it gently, toast a few hazelnuts, add the crème fraîche, and shave the truffle.
Then the plates can catch the light, and dinner can begin.
