Homemade Summer Pizza: Grilled Aubergine, Rocket & Karine & Jeff Tomato Sauce

Craving something fresh and simple on your plate?
Homemade pizza gets a summer makeover, full of flavour. Forget ready-made mixes: this is all about good ingredients, simple and organic. For the base, we rely on our Karine & Jeff tomato sauce with Parmesan, basil and pine nuts, cooked with beautiful tomatoes, olive oil and aromatic herbs. Nothing more, nothing less.
Here is a recipe that is perfect for summer evenings, made for sharing as often as you like.
Ingredients (serves 2)
- 1 thin pizza base (homemade if you can!)
- 1 jar of Karine & Jeff tomato sauce with Parmesan, basil and pine nuts
- 1 aubergine
- 1 ball of mozzarella (or burrata)
- 1 generous handful of fresh rocket
- A drizzle of olive oil
- Salt, pepper, oregano, basil
- Parmesan shavings and toasted pine nuts (optional)
Method
- Preheat the oven to 220 °C.
- Cut the aubergine lengthways into thin slices. Brush them with olive oil, season with salt and pepper, and grill them for a few minutes in a frying pan or in the oven. The goal? Soft and melting, but still holding their shape: they are the stars of the recipe.
- Roll out the pizza dough on a baking tray lined with baking paper. Spread a generous layer of Karine & Jeff tomato sauce over it.
- Arrange the aubergine slices and pieces of mozzarella on top. Sprinkle with oregano (as much as you like).
- Bake for 12 to 15 minutes. Keep an eye on it: the base should be crisp and the mozzarella melted.
- Straight out of the oven, add the fresh rocket, a drizzle of olive oil, and Parmesan shavings or a few toasted pine nuts for crunch.
- Finish with a few fresh basil leaves for the final touch.
Tip
For a change, swap the aubergine for strips of courgette or grilled pepper, or add a few black olives. And why not a little lemon zest over the rocket?
🥄 The Karine & Jeff twist?
A simple, flavourful tomato sauce base, with no compromise on quality. And that changes everything.
