This dish is best enjoyed reheated, paired with a green salad, with a few touches of dandelion or rocket, for instance. It can also accompany fresh fish, grilled meat, or vegetables. Serve with a glass of Italian wine, such as Chianti, for a festive atmosphere, or more casually, with a lemonade.

Karine & Jeff’s Small spelt pilaf with tomato and basil sauce is a modern and creative reinterpretation of a classic Middle Eastern and Central Asian dish. This original recipe fuses tradition and innovation, replacing the usual rice with small spelt, chosen for its superior nutritional qualities and unique flavour.

Our pilaf begins with a base of olive oil and onions, where the small spelt is carefully browned before being simmered with water. This age-old cooking method gives the dish a distinctive texture and flavour, highlighting the natural richness of the spelt.

On top of this pilaf, we add our family tomato coulis, a simple but exquisite recipe made with tomatoes, onions and a touch of basil. This sauce adds a sweetness and freshness that blends harmoniously with the rustic taste of small spelt.

To sweeten and enrich the dish, a pinch of Parmigiano Reggiano PDO is sprinkled on top, adding a subtle, refined cheese note that enhances all the flavours.

The Petit Épeautre Pilaf is a complete and nourishing dish in itself, thanks to its richness in nutrients. However, it can also be superbly accompanied by fresh fish or grilled meat for an even more complete meal. For the best tasting experience, we recommend simmering it over a low heat.

Serve this dish with a glass of Italian wine for a festive dinner, or with a lemonade for a light and complete lunch. Petit Épeautre Pilaf is a tribute to simplicity and authenticity, a celebration of traditional cooking revisited with a modern twist.

Rediscover the tradition of pilaf with our Small spelt pilaf with tomato and basil sauce, an invitation to a culinary journey rich in flavour and history.
