Karine & Jeff’s courgette and basil gazpacho is a modern reinterpretation of a classic Mediterranean dish, rooted in the art of transforming simple ingredients into a rich, flavourful dish. This gazpacho draws inspiration from the culinary traditions of southern Spain and Portugal, while adding a touch of creativity that is our trademark.

Our gazpacho features courgette, complemented by broccoli, onion, and cucumber—vegetables that, with their roundness and freshness, evoke nature’s bounty. The goal was to celebrate these often-overlooked vegetables by offering a soup that can be enjoyed both hot and cold, depending on taste and season. Ewe’s milk cream adds a comforting creaminess, giving the recipe a pleasant consistency and a subtle hint of character.

The finishing touch to this gazpacho is garlic and basil, which add a distinctive note to this fresh, summery dish. Basil and courgette gazpacho stands out as a robust, nourishing soup, capable of serving as a meal in its own right.
